I will add much more to this later , but presently I'm just going to say that a very good chicken broth may be made by simply adding water, salt, and the right scraps to a rotisserie chicken carcass and simmering all day. The right scraps: herb stems, onion peels (even the papery part), asparagus ends, carrot peels, turnip peels, and/or garlic skins.
Also, potato peels , one of the most commonly eaten scraps, are very bad for you, containing a lot of oxalates! On the other hand, if you have such resources, they make good fodder for the chickens or compost. .
