Peas Porridge

๐ŸŒŸThis recipe is naturally (without me so much as thinking about it beforehand) vegan and gluten-free .๐ŸŒŸ

Ingredients

  • 1 lb/pack of green split peas
  • Water to cover to two inches above
  • Olive oil
  • 1 1/2 tsp salt
  • 1 large onion, chopped
  • 2 carrots, peeled and chopped

Instructions:

  1. Pour peas into a pot, add water, bring to a boil, turn down, and set a timer for 1 hour.
  2. When the timer goes off, prepare the carrots, saving the peelings in a freezer bag for future use in a broth , and add the carrots to the pot. Set a timer for 40min.
  3. Get out a frying pan of any size or type and add onion and enough olive oil to coat. Turn to medium high. When this starts to sizzle, turn down. Add salt to peas and carrots. Periodically stir both peas and onions until onions are soft. Add onions and olive oil to pot. Stir and let sit a few more minutes.
  4. Remove from burner and serve.

This recipe can be doubled and/or varied with different vegetables or the addition of meat. It is very tasty, wholesome, and frugal.
