Get out a frying pan of any size or type and add onion and enough olive oil to coat. Turn to medium high. When this starts to sizzle, turn down. Add salt to peas and carrots. Periodically stir both peas and onions until onions are soft. Add onions and olive oil to pot. Stir and let sit a few more minutes.
Remove from burner and serve.
This recipe can be doubled and/or varied with different vegetables or the addition of meat. It is very tasty, wholesome, and frugal.
