5 cups watermelon rind, chopped very thinly
1 package non-cut mushrooms, chopped
extra virgin olive oil to coat
1 package French onion dip mix/seasoning
(Mostly self-exlanatory. Cook mushrooms a bit before adding watermelon rind)
2-2 1/2 lbs. chopped, boiled potatoes (we chopped them before cooking and did 10 minutes with a little water in a waterless cooking sauce pan)
1 cup sour cream
4 tbsp butter
1/2-3/4 teaspoon salt
(Mash all that stuff together. Using roughly similar proportions, you can make much bigger batches as well. The sour cream is what makes it exemplar.)
Note for both recipes together: I put pre-shredded cheddar (creamy-melt triple-cheddar in this case) on my mashed potatoes and stir fry and melted it on in the microwave. 👌🫶👍
➡️The stir fry would probably be good on rice, steamed sweet potato, or even spaghetti pasta as well.⬅️
