2 red and/or orange bell peppers, chopped
Around two cups of watermelon rind, peeled and cut into small thin pieces
1 onion, cut into thin strips or however you like
3/4-1 lb ground beef, preferably grass fed
Enough olive oil to coat vegetables
1/2 package fajitas seasoning
Salt to taste

Mostly self explanatory. Cook vegetables until tender, then add beef. Try not to overcook the beef. Large non-stick pan with a lid preferable.
