The concept of smoke point is a myth because it is a misleading and incomplete measure of the stability of an oil when exposed to heat.

Smoke point is defined as the temperature at which an oil begins to break down and produce smoke, but this process is not the only factor that contributes to the deterioration of an oil's quality.

The smoke point of an oil does not take into account its chemical composition, including the presence of harmful compounds, nor does it reflect the formation of harmful by-products that can occur when the oil is exposed to heat, even before it reaches its smoke point.

Extra virgin olive oil is a high-quality oil that is rich in monounsaturated fatty acids and antioxidants, which makes it more stable and resistant to oxidation when compared to other oils.

While the smoke point of extra virgin olive oil is lower than that of some other oils, its high stability and health benefits make it a good choice for frying, especially when used in moderation and at moderate temperatures.

The following are just a few examples of the many delicious dishes that can be prepared with EVOO.

Grilled or roasted vegetables: EVOO is a perfect choice for grilling or roasting vegetables as it helps to bring out their natural sweetness and enhances their flavors.
